Sunday, 2/21 -- pretty much a day of rest

A deliciously slow start today, just no need to get cracking ... and we just didn't!

After suitable deliberation, Linda and Claudette meandered off to the Lazy River, reporting later that they'd made THREE entire circuits.  Lots of folks assume that this inner-tubing experience is for the younger set, but all of us can warmly recommend it to dabblers of any age.



Meanwhile, I got back to the pork tinga.  The pork had been stewed earlier, it just needed to be shredded and the sauce developed.  It's a tasty meal, including diced potatoes, so it doesn't need many sides.  And look at the paltry vegetable inventory left to use now!








We finished up the jicama salad, which seemed even better after the flavors blended overnight.  Steamy plates of tinga, flanked by corn tortillas, and we were off to an early-to-bed ... SETTING THE ALARM for our early rise in the morning.
